Digger's Kitchen !!
Every now and again i will post a exiting new recipe....LOL
Here goes the first one.
Get two medium sized spuds (any brand) peel them and cut them into about half inch dices , measure out carefully about two small pours of oil in a non stick frying pan , chuck the spuds in (at this point the pan needs to be hot so you cannot place your finger on the bottom of it for long "don't try this at home") you need to keep an eye on them cook them on all four sides.
While they are cooking grab some bacon and a pair of scissors (not the one you use for cutting the kids hair) slice the bacon into strips about half an inch (not vital) when the spuds are brown / black add the bacon strips cook on a lower heat (still not advisable to place fingers in the pan just yet) until golden brown ish.
Make a hole between the spuds & bacon add two eggs cover pan , while this is in its final minutes of cooking toast two slices of bread and use as a base for the contents of the pan . Place the toast on a plate ,cover with the spuds and the bacon add salt & pepper to taste.
A little tip make more than you might think because if you are like me you will keep tasting it during cooking and it could leave you with nothing to dish up. also it would be good if you have a cooker hood to extract he smoke and flames.
Feel free to adjust this menu to your own personal taste .
I will work on another recipe soon . ENJOY..
